COLOUR
Bright pale straw with a light green shimmer.
NOSE
Deligthful aromas of Honeydew melon, green Feijoa, freshly cut limes and a hint of freshly mowed grass.
PALATE
Clean bright flavours of fresh ripe orchard lemons and tart passion fruit with a subtle apple crumble mid palate gliding into a crisp citrus finish.
PRODUCTION
Organic Estate Sauvignon Blanc grapes are hand-picked at veraison when the grapes first start to accumulate sugar. These small slightly green grapes are then softly pressed with the resulting 100% grape juice naturally setled, chilled, filtered and bottled all within four days to maximise the "just picked" freshness and capture the fruits primary character.
Veraison: The time when red grapes change colour from green to red/black and for white grapes to a golden yellow colour. Grapes move from the "growing" stage to the "ripening" stage.
FOOD PAIRING
§ Deglazing: Verjuice can be used to deglaze pans after cooking meat or vegetables, adding depth and flavour to sauces.
§ Sauces and Dressings: It's a great addition to sauces, vinaigrettes, and marinades, providing a balanced acidity.
§ Poaching: Verjuice can be used to poach fruits or other ingredients, adding a subtle tartness.
§ Seafood: It's a natural pairing with seafood, enhancing the flavours of fish and shellfish.
§ Cocktails and Mocktails: Verjuice can be used to create refreshing and sophisticated drinks.
§ Baking: It can often be used in place of lemon juice or vinegar.
§ Reconstituting Dried Fruit: Verjuice can be used to rehydrate dried fruit, adding a pleasant tartness.
VINTAGE NOTES
A mild dry winter proceeded a mild to warm spring with periodic showers. Summer was typically hot and dry receding into cool nights and mild warm days. The fruit at harvest was clean and ripe across all varieties exhibiting good varietal definition and drive.

Delivery & Shipping Details
Mount Avoca use both couriers and Australia Post to ensure a reliable and efficient delivery service. If you are not at home to accept your delivery, they will leave your wine in a safe place, though Aus Post may leave a card for collection from your nearest post office. Please specify as much detail as possible in the 'delivery instructions' area and we will do our best to ensure a seamless delivery.

If you're based in WA, NT and TAS, we offer $10 flat rate on all shipping too
Delivery Times
Please allow 3–5 working days for delivery to capital cities and 1–2 weeks for regional areas and interstate, though we've noticed that delivery times have taken longer since Covid 19 came and went. Customer service is important to us; if we foresee a problem with your delivery we will contact you to discuss it. The above times are guidelines only and may be faster or slower depending on your location.

Requirements
- Please include clear delivery instructions and a telephone number on all orders.
- Wine damaged in transit will be returned to Mount Avoca and we will contact you to make alternative arrangements.
- Undeliverable wine will be returned to Mount Avoca and we will contact you to make alternative arrangements. Undeliverable wine will incur an administration fee of $30 for re-shipping.
- As we have no control over shipping Mount Avoca takes no responsibility for the delivery times or loss of orders.
