Winemaking
The story of the 2010 Cordon Cut wine starts well before the grapes were harvested. The canes with the fruit (called “cordons”) are cut and left to hang on the trellis for several weeks prior to harvesting. This concentrates both the flavours and the sugars as the berries dry out, looking more like sultanas. Assessed daily, the grapes are eventually harvested and pressed into stainless steel tanks. After cold-settling for a week, a small percentage was racked off for barrel ferment and the rest was inoculated and fermented in tank. Specialist yeast strains were used to accentuate the already abundant aromas and intensify the fruit flavours. After eight months of barrel ageing, the 2010 Cordon Cut Sauvignon Blanc was carefully blended and bottled in January 2011. With over twelve years of bottle age this wine still shows lively flavours and a crisp lemon sorbet finish. A delightful aperitif that can be enjoyed lightly chilled it is also an ideal accompaniment to exotic cheeses where it is best served at room temperature.
Only a few cases remain, so make the most of this “Museum” wine.
